Every year we celebrate my little sisters brithday with a wonderful moist 3 layer coconut cake with a walnut cream-cheese frosting and then a lovely sprinkling of sweetened coconut shavings..

This is a recipe we got from an amazing family friend, which has been modified slightly over the years.. now you can get the amaya in cupcake, truffle and cake form…

a very popular choice for wedding cakes actually,because it stays moist for so long… and is just too delicious..
